Gorton’s Fish Tacos with Avocado Crema

Summertime is right around the corner, which means it’s time to get outside and soak in some of that vitamin D! My family and I love this time of year because we can go on hikes around PA, picnics in the park, bike rides around the neighborhood, or hang at home for a sprinkler day! Although, the summer food is where we thrive. Traditions are big in my family, so I love keeping them going with my kids. Our traditional summer meals are always a fun time to make; plus, we love adding small twists to our favorite recipes to see what else we can create! 

Seafood meals are one of our favorite summer dishes, like these fish tacos using Gorton’s Crunchy Battered Filets. I love making sure my family is getting the benefits of the omega 3-fatty acids, iron, protein, potassium, and vitamin B that fish has to offer. Did you know that the average American is only consuming about ½ of the USDA’s recommended seafood intake? That’s why we love to swap out traditional proteins, like red meat or ground turkey, with Gorton’s fish in some of our favorite meals.

Baja Fish Tacos are on the menu tonight. Luckily, Gorton’s fish takes little time to bake, making them the perfect option for busy mamas like me. I toss the fish in the oven, and can create the toppings in no time.I love using the recipe on weeknights because leftovers make the perfect lunch the following day! I like to keep the ingredients separated in a bento box to help them stay fresh. This recipe can also be modified to different tastes, so don’t be afraid to remove or add a few ingredients to make it your own. For those on special diets like keto, try substituting the regular tortilla for a low-carb option. 

Gorton’s Fish Tacos

Ingredients, 5 servings

Gorton’s Fish Tacos:

1 Bag Gorton’s Crunchy Battered Filets

10 tortillas

Optional: fresh pico de gallo 

Cabbage Slaw:

4 cups green and purple cabbage, thinly sliced

2 tablespoons lime juice

1/4 cup chopped fresh cilantro

1 tablespoon honey

salt and pepper, to taste

Avocado Crema:

2 avocados

1/4 cup fresh cilantro

¼ teaspoon garlic powder

1/4 teaspoon cumin

1/8 teaspoon red pepper flakes

2 tablespoons lime juice

2 tablespoons red wine vinegar

1 tablespoon olive oil

salt, to taste

Instructions

  1. Preheat oven to 450 degrees and arrange Gorton’s Crunchy Battered Filets on a metal baking pan. Once preheated, bake for 17-19  minutes, flipping after 8 minutes. 

  2. While cooking, make the slaw by adding cabbage to a large bowl with lime juice, cilantro, honey, salt, and pepper. Toss to combine and set aside.

  3. Make avocado crema by adding avocado, cilantro, garlic powder, cumin, red pepper flakes, lime juice, red wine vinegar, olive oil and salt to a food processor. Blend until smooth and set aside. 

  4. Once filets are golden brown, add 2 tablespoons of avocado crema to a warm tortilla with slaw, one filet and  the optional pico de gallo.
