BBQ Chicken Kale Salad

I’m not addicted to anything… except kale salads. As I’ve been working towards my wellness journey I have found that breaking my fast with one of these salads gives me prolonged energy and for lack of a better word, absolutely slaps after a hard workout at the gym! It’s SO good, I made this with mostly veggies from my local amish stand and the rest was already in my pantry. Keep reading for my fav kale salad recipe!

WHAT YOU’LL NEED

1 bundle of kale
1 lemon, juiced
2 tablespoons olive oil
1 cup grilled chicken
2 tablespoons bbq sauce
1 small tomato
1/2 red onion
1 small avocado
1 cup black beans
1 cup corn
1 cup tortilla strips
salt, to taste

INSTRUCTIONS

  1. Start by washing and chopping produce. In a large bowl, add kale, lemon juice, olive oil, and salt. Massage kale with hands for about three minutes, or until leaves are soft.

  2. In a small bowl, stir grilled chicken and bbq sauce until well coated.

  3. Next, add bbq chicken, tomato, red onion, avocado, black beans, corn, and tortilla strips to the large bowl with kale. Toss salad and enjoy!
