Garden Veggie Pasta

This garden veggie pasta sauce recipe went VIRAL on my instagram this fall, and I can see why! It’s a great option to limit food waste, simply roast your leftover veggies at the end of each week and add to your favorite pasta. Get the whole recipe below!

What you’ll need -

3 large tomatoes, halved
1 large carrot, peeled and chopped
1/2 squash, chopped
1/2 red onion, quartered
1/2 red pepper, chopped
5 cloves garlic
2 tablespoons olive oil
salt and pepper, to taste
1-2 tablespoons herb blend
1/2 cup milk of choice

Instructions -
1. Preheat your oven to 350 degrees.

2. In a baking sheet or roasting pan, add all veggies and toss with olive oil, salt, and pepper.

3. Roast for 45 minutes.

4. Add all roasted veggies to a blender with chosen herbs, salt, milk and blend. Add to cooked pasta!
