Greek Jar Salad Meal Prep

Make your week easier by meal prepping your salads! Preparing them this way keeps everything fresh and not soggy with the dressing on the bottom of the jar! This greek inspired salad is my favorite. 🤤 Keep reading for the recipe!

What you’ll need —

1 can chick peas, drained and rinsed
1 container of grape tomatoes, sliced
1 cucumber, sliced
1 small jar of olives
1/2 cup feta cheese
1 bell pepper, chopped
3 cups greens

For the dressing —

1 lemon, juiced
2 tbsp olive oil
2 tbsp dijon mustard
1 tsp minced garlic
1 tsp oregano
salt and pepper, to taste


Instructions -

  1. Begin by making the dressing. In a small bowl, combine lemon juice, olive oil, dijon mustard, minced garlic, oregano, salt, and pepper.

  2. Pour 1/3 of the dressing into each jar. Then add chick peas, tomatoes, cucumbers, olives, feta cheese, pepper, and greens, stacked on top of each other. Close each lid and refrigerate until needed!
