Grilled Lemon Chicken with Asparagus
The smell of summer grilling, fresh-cut grass, and a little coconut sunscreen never get old. Aimery loves being in the backyard while we grill because he’s such a great helper, just like I used to be! Ben and I love making healthy dishes on the grill to spice up our normal meal routines.
However, my least favorite part of making any meal is the clean-up afterward. The dishes pile up and no one feels like cleaning after a delicious meal together. What you’ll need:
For the Chicken:
4 chicken thighs
¼ cup olive oil
1 large lemon
1 teaspoon oregano
2 garlic cloves
Salt and pepper
Parsley, to garnish
For the Asparagus:
2 bunches asparagus
1 medium lemon
½ tablespoon olive oil
Salt and pepper
Instructions:
In a large bowl, start by marinating chicken with olive oil, lemon juice, oregano, garlic, salt, and pepper. Toss to combine and marinate in the fridge for at least 30 minutes.
While waiting for the chicken to marinate, toss asparagus with lemon juice, olive oil, salt, and pepper.
Once chicken is marinated, preheat your grill to medium high heat. Place chicken on the grill for 5-7 minutes and then flip for another 5-7 minutes, or until juices run dry.
Add asparagus to the grill and cook for 3-5 minutes on each side.
Remove chicken and asparagus from the grill. Using a Dixie cutting board, chop chicken into strips. Immediately serve with parsley and lemon wedges, if desired.
