Mayo-Parm Crusted Chicken

Happy Friday!!! I do my grocery shopping over the weekends - anyone else? So today I went fridge hunting for leftovers 🤪 I found roasted carrots, rice, and chicken breast that needed to be cooked asap. With a few more ingredients I decided to make mayo-crusted parm chicken and it turned out SO good, I wanted to share. I also made sriracha mayonnaise for dipping - YUM! get the recipe below!

What you’ll need…

  • 4 chicken breasts

  • ½ cup panko breadcrumbs

  • ½ cup monterey jack cheese

  • 2 teaspoons ranch seasoning

  • 1 teaspoon parsley

  • 1-2 tablespoons mayonnaise

  • 4 tablespoons butter

  • salt and pepper, to taste

Instructions

  1. Preheat oven 425 degrees

  2. Melt butter in a small bowl until melted, about 30 seconds. Stir in panko, monterey jack, salt, and pepper to create a panko mixture.

  3. Next, pat chicken dry with paper towels before seasoning with salt and pepper. Next, spread each top of chicken with 1 tsp mayonnaise. Firmly press panko mixture on each top of chicken. Roast chicken for 15-20 minutes.
