Our Favorite Blueberry Cobbler

Earlier this week, I found some of the most beautiful blueberries at our local produce stand. They were huge and sweet, and I immediately knew that I wanted to make a blueberry cobbler over the weekend. I’ll be honest - I really don’t love to bake, I would much rather pick up a treat at Whole Foods or a local bakery when hosting. However I wanted to try something new! This recipe turned out SO good and selfishly wanted to save it here so I can also refer to it later. Sharing the recipe below!

WHAT YOU’LL NEED

3 cups fresh blueberries
1/2 lemon, juiced
3 tbsp butter, melted
1/2 cup of your preferred milk
1 cup sugar
1/4 teaspoon salt
1 teaspoon baking powder
1 cup flour
1/2 teaspoon vanilla extract
1 tablespoon corn starch
1 cup boiling water

INSTRUCTIONS

  1. Begin by preheating the oven to 375 degrees. Prepare your 8x8 pan by spraying with cooking spray. Add blueberries and lemon juice, then set aside.

  2. In a medium bowl, mix butter, milk, sugar, salt, baking powder, flour, and vanilla. Add corn starch and mix again.

  3. Pour cobbler mixture over blueberries. Then, pour boiling water over the entire cobbler.

  4. Bake for 45-60 minutes, until blueberries are bubbling and cobbler is browned.
