Pumpkin Cream Cold Brew

Calling all pumpkin lovers!! I’m about to rock your world with my favorite new drink - Starbucks Pumpkin Cream Cold Brew. If you’re a pumpkin lover like me and are not afraid to admit it (or even if you are), then I’ve got you covered with this quick and easy copycat recipe for the most amazing Starbucks drink you’ll ever try. I love a good PSL in the fall time, but my new favorite drink this season has got to be the Pumpkin Cream Cold Brew. I branched out a few weeks ago from my usual PSL order and I swear I’ve had like four this week! I knew I needed to recreate an at home version! Instead of spending all of my money at Starbucks, I’ve saved so much by making this at home and you should too!

If you’re like me and you love pumpkin drinks but feel like sometimes they’re too sweet or artificial tasting, this is the drink for you. It’s made with smooth cold brew coffee and sweetened pumpkin cream. You can add as much or as little as you want and it’s perfect for the fall season. 

WHAT YOU’LL NEED:

  • Milk frother or blender

  • Pitcher (for cold brew coffee)

  • Mason jar with lid (to store pumpkin cream)

  • Cold brew coffee (store bought or homemade)

  • 1 cup heavy whipping cream

  • 1 tbsp pumpkin puree

  • 1 tsp pumpkin pie spice

  • 1 tsp vanilla extract

  • ½ cup sugar

  • Glass with ice

How to make cold brew coffee at home:

If you don’t have cold brew coffee in your fridge already or don’t want to buy it from the store, you can make your own at home! It’s super simple and budget friendly which is always a plus.

  1. Stir together about 1 cup of coarse ground coffee beans with 4 cups of COLD water and add to a pitcher. Refrigerate for 24 hours.

  2. Slowly pour coffee (with grounds) through a strainer until all liquid has been filtered through.

  3. Dilute cold brew with about 4 cups of cold water to make it less strong. (Note: If you like stronger coffee, don’t add as many cups of water!)

How to make the pumpkin cream:

Now… time for the best part -- the pumpkin cream!! When I first tried this drink, I thought to myself “how did they do this?” because the cream is just too good, but then I quickly realized that it’s not as hard as you may think.

  1. In a medium sized saucepan, combine heavy whipping cream, sugar, pumpkin puree, and pumpkin pie spice. Whisk together over medium heat until mixture steams (DO NOT BOIL) and until the sugar dissolves.

  2. Remove mixture from heat and hand whisk in the vanilla extract. 

  3. Transfer mixture to refrigerator in a pitcher or mason jar and let it cool down.

  4. Once the mixture is chilled, use a milk frother to froth the pumpkin cream. (Note: You can also put the lid on the mason jar and shake until the mixture froths up. 

Now it’s time to put it all together!

The final portion of this recipe is to put it all together and enjoy!

  1. Fill a 12oz glass with cold brew coffee and any sugar (to taste) if you want your cold brew a little sweeter. 

  2. Mix together the sugar and cold brew coffee until sugar dissolves and then add ice to fill the glass about half way.

  3. Pour your desired amount of whipped pumpkin cream on top of the coffee.

  4. Garnish with pumpkin spice, grab your favorite eco-friendly straw, and sip away!
