Sweet Potato Chick Pea Quinoa Bowl

I decided to mix up my normal kale salad lunch routine with this sweet potato quinoa bowl and it did not disappoint. The best thing about these bowls is that you can create them however your body is craving them - feel free to swap the nuts or protein to whatever you enjoy! I topped mine with my favorite tahini sauce - making a note to share that recipe in an upcoming post. Get the recipe below!

WHAT YOU’LL NEED…

1 bunch kale, chopped

2 cups quinoa, cooked

1 large sweet potato, chopped and roasted

1 can chickpeas, drained and rinsed

1/4 cup pistachios

1/4 cup dried cranberries

1/2 tablespoon olive oil

1/2 lemon, juiced

salt and pepper, to taste

INSTRUCTIONS:

  1. Place kale in a large bowl and add oil, lemon juice, and salt. Massage kale for 2-3 minutes, or until leaves are soft.

  2. Build your bowl by adding quinoa, sweet potatoes, and chickpeas. Then top with pistachios and dried cranberries.

  3. Top with your favorite tanini dip or sauce!
