Cauliflower Tzatziki Bowl
Something about me is that I get stuck on the same meal for weeks on end. I’ve been hyper fixated on this cauliflower tzatziki bowl lately and omg it’s so yummy. Made with crispy cauliflower, sweet potatoes, tahini, and an avocado cucumber side - it’s so easy to make in your air fryer in less than 20 minutes. Keep reading for the recipe!
What you’ll need -
2 cups cauliflower florets
2 tbsp olive oil
1 tsp paprika
1 tsp chili powder
1 tsp oregano
1 tsp turmeric
1 tsp garlic powder
1 sweet potato, chopped into matchsticks
1 small cucumber, chopped
1 small avocado, chopped
1/2 lemon, juiced
1/2 tsp Italian seasoning
salt and pepper, to taste
1-2 cups kale or lettuce
1/4 cup crumbled feta cheese
4 tbsp tzatziki
naan, for serving
Instructions -
Preheat air fryer to 400 degrees.
In a medium bowl, combine the cauliflower with 1 tbsp of the olive oil, paprika, chili powder, oregano, turmeric, garlic powder, salt, and pepper.
In a small bowl, toss the sweet potatoes with 1 tbsp of the olive oil, salt, and pepper.
Bake both the seasoned cauliflower and sweet potatoes in the air fryer for 15-20 minutes, or until browned and crispy.
Meanwhile, toss cucumbers and avocado with lemon juice, Italian seasoning, salt, and pepper.
Serve by adding kale or lettuce into a bowl with cauliflower, sweet potatoes, avocado/cucumber, feta cheese, tzatziki, and naan.
