Lemon Avocado Toast with Arugula

Something we always have around our house is avocados. Ben and I are addicted to making homemade guacamole, and also adding avocados to our breakfast favorites. I have been eating avocado toast lately when running out the door in the morning - it’s so quick and with the healthy fats, keeps me full until my next meal. This lemon avocado toast with arugula recipe has been my go-to these last few weeks, so I wanted to share the recipe with you all! Keep reading for this quick recipe!

Lemon Avocado Toast with Arugula

What you’ll need…

  • 2 slices of your favorite bread, toasted

  • 1 ripe avocado

  • 1 tablespoon lemon juice

  • 1 handful of arugula

  • 1/2 teaspoon salt

  • everything but the bagel seasoning, optional

  • red pepper flakes, optional

Instructions:

  1. Begin by cutting avocado in half to remove the pit. Scoop the avocado into a small bowl and mash.

  2. Spread the avocado mash on the toast and sprinkle lemon salt, everything but the bagel seasoning, and red pepper flakes, if desired.

  3. Place arugula on top of avocado toast with a squeeze of fresh lemon juice.
