This roasted root vegetable recipe is a holiday favorite, an elevated version of the classic cooked carrots with whipped feta, maple syrup, and fresh thyme.

You only need a few ingredients to make these roasted root vegetables:
root vegetables
feta cheese
cream cheese
maple syrup
herbs
olive oil
HOW TO MAKE Roasted Root Vegetables with Whipped Feta?
To make these roasted root vegetables, simply roast your carrots, parsnip, beet, and turnip on a baking sheet with olive oil, salt, and pepper. While roasting, make your whipped maple feta by blending feta cheese, cream cheese, and maple syrup and then spread onto serving plate. Add roasted vegetables and top with honey, walnuts, and fresh thyme!

- Preheat oven to 400° Fahrenheit and prepare a large baking sheet with parchment paper. If you haven't already, cut the greens off the carrots and scrub the dirt off. Slice the carrots and parsnip lengthwise, and slice beet and turnip into ½ inch rounds.
- On the baking sheet, toss root vegetables with olive oil, salt, and pepper. Roast for 25-30 minutes, or until fork tender and crispy.
- To make the whipped feta, add feta cheese, cream cheese, and maple syrup to a food processor or blender, blending until the mixture is smooth. Add olive oil if the whipped feta is too thick, as it should be spreadable.
- On a serving plate, spread feta and then top with the roasted root vegetables. Garnish with honey, fresh thyme, and chopped walnuts. Serve warm, and enjoy!
Notes
Try drizzling hot honey over the roasted vegetables for more heat and flavor!
This recipe also pairs well with pistachios, if you don't have walnuts on hand.
If you don't want to use a food processor, you can use a whisk with mixing bowl to whip the feta and cream cheese.
