Three Lunchbox Ideas for Back to School
Can you really ever have too many kids lunch ideas?! With everyone going back to school, I’ve been breaking out some old favorite recipes along with new ones I’ve been wanting to try out. If your kids are anything like mine, they probably get bored of the typical turkey sandwich every day. Who can blame them! Healthy, quick, and filling are my top priorities when I’m packing a lunch. These three recipes have been consistent in our lunch rotation, so you know they’re good!
Chicken Quesadillas
I love getting creative with school lunches for Aimery, and this one is both of our favorites (really, I also pack myself one of these to take into the office! 😋). This past week, he’s been loving Chicken Quesadillas with sides of rice, avocado slices, salsa, and sour cream. A small side of chocolate chips finishes off the bento box lunch! The quesadillas are budget friendly as they can be whipped up with just a few tortillas, cheese, and shredded chicken. Slice them up for a quick meal that isn’t boring!
Hummus Box
After a busy weekend with family and friends, taking hours to pack a lunch isn’t on my to-do list. Instead, I’ll usually pack Aimery a hummus lunchbox with his favorite veggies, crackers, and dried fruit. It’s one of our favorite quick packs on a Sunday night. Plus, it’s practically a charcuterie board on the go! To make this version, I used pistachios, pretzels, Ritz crackers, carrot slices, mini yellow peppers, snap peas, raisins, and our favorite classic hummus. These boxes are so versatile, too. Toss in whatever you have on hand to use up what’s already in your pantry.
Turkey Apple and Brie Roll Ups
If you’re looking for a lunch that has luxury feel without the price, time, and effort - look no further! Oven Roasted Turkey, Apple, & Brie roll ups anyone? These make it into our lunch boxes at least once a week (if not way more!) because they’re ridiculously easy to make. If your little one is interested in helping with making their own lunch, this is a great one to start with. Grab one slice of turkey and layer on a thin slice of brie, along with a slice of Granny Smith apple. Wrap it all up into finger-sized bites and you’re done. Our grocery list always includes these three ingredients on it so we can make this lunch each week.
Back to school is in full swing now. Everyone is settling in for what looks to be another productive year. To support my kids’ productivity, I like to supply them with the nutrients needed to push through the day in healthy lunches like these. What will be in your children’s lunchboxes this year?
