Warm Harvest Quinoa Bowl

My kale salad era is continuing into the winter with this warm harvest bowl with roasted brussels, sweet potatoes, chick peas, apples, and dried cranberries with a maple tahini dressing. Keep reading for the recipe!

What you’ll need -

1/4 cup tahini sauce
2 tablespoons lemon juice
2 tablespoons maple syrup
salt and pepper, to taste
3 stalks kale, chopped
1 cup quinoa, cooked
10 brussels sprouts, halved and roasted
1 sweet potato, chopped and roasted
1 apple, chopped
1 can chick peas, cooked
1/2 cups dried cranberries

Instructions -

  1. In a small bowl, mix tahini sauce with lemon juice, maple syrup, salt, and pepper. Mix and set aside.

  2. In a salad bowl, toss kale, quinoa, roasted brussels sprouts, sweet potatoes, apples, chick peas, and cranberries. Add maple tahini dressing. Enjoy!
