Switch up your apple pie this Thanksgiving with these Caramel Apple Pie Cookies, they are as delicious as they sound and taste just like the real thing (or may I even go as far to say, better!!).

  1. Preheat oven to 350 degrees Fahrenheit and line two baking sheets with parchment paper.
  2. In a large mixing bowl, whisk butter, brown sugar, and granulated sugar until combined. Add the eggs and vanilla extract to the mixing bowl and whisk until creamy.
  3. Fold in the flour, baking soda, and salt, until combined. Add the crushed pie crust, caramel bits, and 1 cup of the chopped apples to the mixing bowl, stirring until just combined.
  4. Using a cookie scoop, create 2-3 tbsp cookie dough balls and place onto the lined baking sheets. Optional: Refrigerate the cookie dough balls for at least 1 hour.
  5. When you are ready to bake, place cookies into the oven for 15 minutes, or until edges have browned. Remove from the oven and allow time to cool, about 5 minutes. Enjoy!

Notes

Remember to not over mix your dough, only fold ingredients until everything is slightly combined. Forgetting could lead to dry cookies!


If you prefer larger, bakery style cookies, make the cookie dough balls larger and put six on each pan. You may need a few extra minutes of baking time!


I like to take my cookies out of the oven a few minutes early to round them using a cookie cutter and top with more diced apples!


The best tip for last... Do not over bake the cookies! They will seem under baked when first out of the oven, but I promise that they will continue to cook as they cool down.


Drizzle with caramel for more of a sweet touch!
