Chicken Teriyaki Pineapple Bowl
Ingredients:
Ripe pineapple
4 cups cooked rice
2 Chicken Breasts
1 tbsp olive oil
1 tbsp soy sauce
2 cups pineapple, chopped
Your favorite teriyaki sauce
Directions:
Slice pineapples in half (lengthwise) and carve out the pineapple flesh. The best way to do this is to run a sharp knife around the edge of the shell and then a few cuts in the middle of the flesh, just make sure to leave enough room for the shell to stay intact! Next, scoop out large chunks of the pineapple flesh.
Take 2 cups of the pineapple flesh and cut into small bite-sized pieces, set aside.
Add oil to a large skillet on medium high heat. Add chicken and cook until chicken is golden brown.
Reduce heat to medium. Pour in your favorite teriyaki sauce and toss chicken until sauce is heated. Stir in pineapple chunks.
Stir in rice and divide teriyaki chicken evenly between the two bowls. We did half white rice, half pineapple teriyaki!
