Grilled Cauliflower Tacos with Creamy Chipotle Sauce
We have been loving these grilled cauliflower tacos with my creamy chipotle sauce, such an easy summer recipe thats packed with veggies and the perfect amount of spice - seriously so good and easy to make! Keep reading for the recipe!
What you’ll need -
1 large head of cauliflower, cut into steaks
1 tbsp olive oil
1 tsp garlic powder
1 tsp paprika
1 tsp chili powder
1 tsp oregano
1 tsp salt
1/2 tsp pepper
1/2 tsp red pepper flakes
For the creamy chipotle sauce -
2-3 tbsp chipotle in adobo
1/4 cup honey
1/4 cup sour cream
1/4 cup mayo
1 lime, juiced
Instructions -
Preheat your grill to medium-high heat.
Drizzle olive oil over your cauliflower steaks and toss with all the spices: garlic powder, paprika, chili powder, oregano, red pepper flakes, salt, and pepper.
Place on grill until cooked through and lightly charred, about 5-7 minutes per side.
While cauliflower is grilling, make the creamy chipotle sauce by adding chipotle in adobo to your blender with honey, sour cream, mayo, and lime juice. Blend until smooth.
Warm your tortillas before serving and assemble by adding grilled cauliflower with creamy chipotle sauce to your tacos. I also like adding veggies such as tomatoes, avocados, slaw etc!
