Maple Bourbon Stuffed Sweet Potatoes

Instructions
- Preheat oven to 400° Fahrenheit and line a baking sheet with parchment paper.
- Prepare the sweet potatoes by rinsing with water and drying with a paper towel. Cut each sweet potatoes lengthwise, and then place them cut side down on the baking sheet. Bake 40-50 minutes, or until fork tender.
- Remove from the oven and allow time to cool. Reduce the oven temperature to 350° Fahrenheit
- Using a small spoon, scoop out the inside of each sweet potato, leaving ¼ inch of the sweet potato in the skin.
- In a medium bowl, add the scooped out potato, butter, maple syrup, bourbon, salt, and cinnamon. Stir to combine, and then scoop back into potato halves.
- To make the topping, combine the pecans, cinnamon, and maple syrup in a small bowl. Divide the topping evenly between all the sweet potatoes.
- Bake 20-25 minutes more, or until top is golden brown. Enjoy!
