Instructions

  1. Preheat oven to 400° Fahrenheit and line a baking sheet with parchment paper.
  2. Prepare the sweet potatoes by rinsing with water and drying with a paper towel. Cut each sweet potatoes lengthwise, and then place them cut side down on the baking sheet. Bake 40-50 minutes, or until fork tender.
  3. Remove from the oven and allow time to cool. Reduce the oven temperature to 350° Fahrenheit
  4. Using a small spoon, scoop out the inside of each sweet potato, leaving ¼ inch of the sweet potato in the skin.
  5. In a medium bowl, add the scooped out potato, butter, maple syrup, bourbon, salt, and cinnamon. Stir to combine, and then scoop back into potato halves.
  6. To make the topping, combine the pecans, cinnamon, and maple syrup in a small bowl. Divide the topping evenly between all the sweet potatoes.
  7. Bake 20-25 minutes more, or until top is golden brown. Enjoy!
