Hear me out: instead of just pie at Thanksgiving, make this Pumpkin tiramisu! If you’ve never made it the authentic way, it’s probably easier then you may think. Make it the day before Thanksgiving and enjoy the next day!

  1. Begin by making the coffee, and then set aside to cool.
  2. Using two medium mixing bowls, separate the egg yolks from the egg whites. In the egg yolk bowl, gently fold in the mascarpone, pumpkin purée, and salt.
  3. In the egg white bowl, beat and then gradually add in sugar until stiff peaks form, about 3-5 minutes. Fold in the egg yolk mixture into the egg white bowl until creamy.
  4. Prepare your baking dish and quickly dip each of the ladyfingers into the coffee then arrange at the bottom of the dish. Spread half the cream mixture on top of the soaked ladyfingers and then repeat one more time.
  5. Chill at least overnight (can also be enjoyed after 1-2 days). Enjoy!
