Pecan Pie Bites

What you’ll need…

  • 4 tablespoons of your favorite butter (I used Brummel & Brown)

  • 2–1/2 cups pecans, chopped

  • 1 can of crescent rolls

  • 1–1/2 cups brown sugar

  • 3/4 cup light corn syrup

  • 1 teaspoon vanilla

INSTRUCTIONS

  1. Start by preheating oven to 350°F. Generously spray a muffin pan with non-stick spray.

  2. In a large skillet over medium heat, melt 2 tablespoons butter. Add chopped pecans and toast for about 5-10 minutes until golden brown.

  3. While the pecans are toasting, unroll crescent dough. Separate the dough into 2 large sections by cutting along the perforated edge. Using a pizza roller makes this part easier! Then, cut each of the large sections into thirds. Next, cut those sections down the middle, so that you have 12 squares total.

  4. Press each square into the muffin cups, while attempting to press down into the cup and up the edges.

  5. In a large bowl, combine brown sugar, light corn syrup, melted butter, and vanilla. Add the toasted pecans until well coated. Spoon about a tablespoon of filling into each crust, or until 3/4 full. You’ll be adding more filling after they bake!

  6. Bake for 10-15 minutes, or until crescent dough is golden brown. Remove from the oven and let set for 5 minutes, then add another tablespoon of filling onto each bite.

Enjoy!
