- Preheat oven to 300° Fahrenheit and prepare a muffin pan. If you haven't already, make your bacon and chop into bite-sized pieces. Chop bell peppers and grape tomatoes.
- In a large bowl, scramble the eggs. Add cottage cheese, salt, and pepper to the bowl and mix to combine.
- In the prepared muffin pan, divide egg mixture into all 12 sections. Top each with chopped peppers, bacon, and cheese.
- Bake with a water bath for 30-40 minutes, or until eggs are cooked through and cheese has melted.
- To reheat and enjoy later, microwave for 30-45 seconds, or until warm. Enjoy!
