These egg bites are perfect to make as a high protein breakfast option for the week ahead! This recipe has cottage cheese for extra protein and is cooked with a water bath to have the best texture!

  1. Preheat oven to 300° Fahrenheit and prepare a muffin pan. If you haven't already, make your bacon and chop into bite-sized pieces. Chop bell peppers and grape tomatoes.
  2. In a large bowl, scramble the eggs. Add cottage cheese, salt, and pepper to the bowl and mix to combine.
  3. In the prepared muffin pan, divide egg mixture into all 12 sections. Top each with chopped peppers, bacon, and cheese.
  4. Bake with a water bath for 30-40 minutes, or until eggs are cooked through and cheese has melted.
  5. To reheat and enjoy later, microwave for 30-45 seconds, or until warm. Enjoy!
