My go-to weekly salad for easy meal prep, made with seasonal ingredients and yummy flavors!

For the dressing
Instructions
- In a medium bowl, toss chicken with seasonings: chili powder, garlic powder, onion powder, oregano, salt and pepper.
- In a pan over medium heat, warm olive oil. Once hot, add seasoned chicken to pan and cook for 5-8 minutes, flipping halfway through, or until cooked through. Remove from heat and allow to cool.
- To prep salad: Divide mixed greens into four separate containers and then top each with cooked chicken, chopped pears, pomegranate, walnuts, and feta cheese.
- To prepare salad: In a large bowl, toss mixed greens, cooked chicken, chopped pears, pomegranate, walnuts, and feta cheese with prepared dressing. Enjoy!
For the dressing
- In a small bowl, add lemon juice, apple cider vinegar, balsamic vinegar, maple syrup, olive oil, salt and pepper. Whisk until combined.
