To make these roasted carrots, simply roast your carrots on a baking sheet with olive oil, salt, and thyme. While roasting, make your whipped maple ricotta by blending ricotta cheese, maple syrup, and lemon juice and then spread onto serving plate. Add carrots and top with honey, walnuts, and more thyme!

Ingredients

Instructions

  1. Preheat oven to 400° Fahrenheit and prepare a large baking sheet with parchment paper. If you haven't already, cut the greens off the carrots and scrub the dirt off.
  2. On the baking sheet, toss carrots with olive oil, salt, pepper and thyme. Roast for 25-30 minutes, or until fork tender and crispy.
  3. To make the whipped ricotta, add ricotta cheese and maple syrup to a food processor or blender, blend until the mixture is smooth. Add olive oil if the whipped ricotta is too thick, as it should be spreadable.
  4. On a serving plate, spread ricotta and then top with the roasted carrots. Garnish with honey, lemon zest, thyme, and chopped walnuts. Enjoy!

Notes

Try drizzling hot honey over the carrots for more heat and flavor!


This recipe also pairs well with pistachios, if you don't have walnuts on hand.


If you don't want to use a food processor, you can use a whisk with mixing bowl to whip the ricotta cheese.
