  1. Preheat oven to 350° Fahrenheit and grease a large baking dish (9x13).
  2. In a large pot, cook pasta until it is al dente. Drain and rinse with cold water to prevent sticking. Put aside to use later.
  3. In a small skillet over medium heat, allow the butter to melt and then brown until it smells toasted and is a deep golden brown, stirring often, about 3 minutes. Add the sage leaves, minced garlic, red pepper flakes, salt, and pepper to the skillet and cook until sage has toasted and garlic is fragrant, about 1 minute.
  4. Sprinkle flour into the skillet over medium heat. Whisk the flour into the butter mixture, cooking the flour, about 1-2 minutes. Add two cups of the half and half and continue whisking to combine. Add one more cup of half and half and stir once more to combine.
  5. Fold one cup of the shredded gouda cheese, one cup of the white cheddar cheese, and ½ cup of the parmesan cheese into the same skillet until smooth and melted. Remove from heat, and then toss in the cooked pasta until fully coated.
  6. In your prepared baking dish, pour half of the pasta to create a small, even layer at the bottom of the pan. Sprinkle half of the remaining cheese over the first layer of pasta. Add the remaining pasta to the pan, and then sprinkle the rest of the remaining cheese on top.
  7. Bake for 20-25 minutes, or until lightly golden brown and bubbly.
