Roasted Sweet Potato Wedges

What you’ll need -
2 large sweet potatoes, peeled and cut into thick wedges
4 oz goat cheese
1/4 cup shelled pistachios
1/4 cup pomegranate arils
1/3 cup pomegranate juice
1/4 cup honey
1 tablespoon hot sauce
1 tablespoon balsamic vinegar

Instructions -
1. Preheat oven to 450 degrees. Toss sweet potato wedges with oil, salt, and pepper before spreading out on baking sheet. Roast for 25-30 minutes.

2. While sweet potatoes are roasting, make glaze by adding pomegranate juice, honey, hot sauce, and balsamic vinegar in a small saucepan. Bring to boil and then simmer for 5 minutes on low heat until reduced to a glaze.

3. Serve with sweet potatoes on a plate topped with pistachios, pomegranate arils, goat cheese, and pomegranate glaze. Enjoy!
